Flourless Chocolate Mint Pancakes

INGREDIENTS
SERVES 1
1 banana
1 1/2 tbsp Unsweetened Cocoa Powder
2 egg(s)
1/4 tsp peppermint extract
1 pinch sea salt
DIRECTIONS
1 TIP: Make sure banana is ripe!
2 In a medium bowl, fully mash the banana with a potato masher or fork. Add the cocoa powder and stir until evenly combined. Add the eggs, peppermint extract, and salt and whisk until well combined.
3 Spritz a large nonstick (PFOA-free) skillet (or griddle) with cooking spray and heat over medium-low. In batches, ladle the batter onto the skillet, about 1/4 cup per pancake. Cook until browned, about 3 1/2 minutes per side.

Serve warm as desired.
